Peach and Arugula Salad with Stilton Bleu Cheese and Roasted Almonds

3 Peaches, sliced into wedges6oz Arugula2oz crumbled Stilton Bleu Cheese1/3 cup roasted, whole almonds1Tbsp Balsamic vinegar3 Tbsp Extra Virgin Olive Oil1 Tsp Maple Syrup1. Combine the vinegar, oil and maple syrup in a small jar with lid, shake vigorously until emulsified

2. Toss with Arugula

3. Divide lettuce on 4 plates, top greens with peach wedges, almonds and Stilton cheese. Enjoy.
