When Christine Lavallee was developing the concept for the Cookery in Inverary, she knew the local community well because she lives nearby. She knew that busy families were hungry for healthy meals and fresh baked goods, made with as many local ingredients as possible.
“The Cookery has always been about doing things a little differently, offering small town service and creating sensational meals from behind those kitchen walls” she said.
Christine opened The Cookery in a new commercial development just south of Inverary because of the ample parking and easy access off Perth Road with the Inverary Pharmasave store. The location has been very well received by the busy local residents that the Cookery was hoping to serve.
When the COVID-29 pandemic hit 15 months ago, the Cookery had no choice but to step up meet a new challenge.
“We had to reimagine our operation to keep our 14 key staff members employed as they all have bills to pay and laying them off was never an option,” she said, and since the Cookery was already well suited to the take-out and delivery options, the business has been able to thrive throughout the pandemic by offering curbside pickup and advanced ordering, among other innovations.
Among those was a new ice cream window, serving Central Smith ice cream from the Peterborough area, in addition to burgers, artisan Pizza and store cooked fresh grab and go entrees.
The Cookery has also stepped up by offering carefully curated grocery aisles that provides a convenient place to shop for specialty ingredients, pantry staples and fresh vegetables without ever having to leave the village.
As we, hopefully, move to the next phase and the slow end of the COVID pandemic, the Cookery is set to embrace the future. A new key team member will be added in August to help continue expanding the catering division and bakery.
“We took steps for COVID and the community has responded by supporting us, and now we are ready to enter a new phase as the community continues to develop and expand. It is an exciting time in Inverary and at the Cookery”
